If you are what you eat, what happens when you eat wild nettles and glacier lilies?
Find out on a visit to Papoose Creek Lodge, set on 20,000 acres of a sustainably managed ranch in southwestern Montana, minutes from Yellowstone National Park.
The natural grandeur here is breathtaking: rugged glaciated peaks rising from rolling grassland; meadows lush with wildflowers; forests of fir, spruce and cottonwood; crystal streams and wildlife galore.
And the sky really is bigger.
But it's not just about the scenery, although that could fill you up for days. Let's not forget the food. The chef's checklist: local, organic, naturally raised and adventurous.
It doesn't get more local than the foothills just behind the lodge. In early June the hills are alive with wild greens. It's a great time to join the chef and a local naturalist for a weekend of foraging, cooking and gourmet dining.
Collect wild nettles (amazingly rich in vitamins and minerals) to make raviolis with goat cheese, brown butter and pine nuts. Harvest delicate glacier lilies (stem and all) for a simple side salad with meyer lemon and sea salt vinaigrette.
Other options for food lovers include an autumn wild mushroom harvest, private cooking lessons, and a weekly Chuck Wagon evening. You'll be traveling by horse-drawn wagon to an incredible creekside cookout.
And while the land may be wild, the accommodations aren't. Expect all the modern comforts, luxurious furnishings and plenty of Western charm.
